The fresh Kamchatka crab season has begun at the "Moscow on the Wave" markets. They are delivered within 24 hours in specially equipped trucks, where special conditions are maintained to ensure the crabs reach the shelves alive. Despite their name, Kamchatka crabs are delivered to Moscow not from the Far East, but from Murmansk. They were introduced to the Barents Sea for commercial development back in the 1960s and 1970s. The cold Arctic waters proved to be a comfortable environment for the crabs: they quickly adapted and established a stable population.
A Kamchatka crab weighs between three and five kilograms. Each cut has its own distinct flavor: the claw meat is prized for its firm texture and slightly sweet flavor, the shoulder is succulent, and the phalanges are salty, tender, and soft. The smallest cut, the knuckle, is considered a gourmet snack and is prized for its delicate meat fibers.
A single crab can be used to create a whole host of dishes: bruschetta, soup, salad, pasta, or risotto. The claws are often served on their own, the shoulder is used for rolls, and the phalanges are perfect for salads.
In the "Cook on the Spot" open kitchen area, the chef will boil or steam crab at customer request. He can also simply shell it, leaving room for culinary experimentation in the home kitchen.
The health benefits of crab meat are just as good as its taste. It contains B vitamins, magnesium, zinc, and phosphorus. It's low in calories and high in protein, making it a favorite among those who follow healthy eating principles. Crab meat also contains omega-3 fatty acids, which are beneficial for the heart and blood vessels.
The "Moscow on the Wave" fish markets opened in the Kosino-Ukhtomsky district in November 2023 and in Mitino in September 2024. Each covers several thousand square meters. Since their opening, they have been visited by two million people, and approximately 1,500 tons of products have been sold. In addition to stalls, the markets feature storage areas with different temperatures, food courts, and workshop studios. Most importantly, they have laboratories that test the quality of all products sold.
The markets offer over 600 types of fish and seafood from the Astrakhan, Murmansk, and Magadan regions, Kamchatka and Khabarovsk Krai, Karelia, Crimea, Yakutia, and other regions of the country.
