Red caviar of pink salmon, chum salmon and sockeye salmon of the new catch appeared at the fish markets "Moscow – on the wave". It is brought from Kamchatka and Khabarovsk Krai.
Pink salmon caviar has a delicate, universal taste, while sockeye salmon caviar has a richer, bitter taste. The eggs of the first fish are bright orange, from three to five millimeters in size. The eggs of the second fish are about the same size, but red. Chum salmon caviar is the largest, up to seven millimeters, amber in color. It is not bitter and is considered the saltiest.
All red caviar at the Moscow-on-the-Wave fish markets is lightly salted. Salmon are caught in ecologically clean waters in compliance with the standards of extraction and processing. The caviar is salted immediately after extraction and packed in special containers with a capacity of 10 to 20 kilograms. During transportation, from air transportation to packaging, a strict temperature regime is maintained – from minus four to plus six degrees.
Salmon caviar is in demand among market buyers all year round, and is often used in cooking. In addition to the classic sandwich, you can make various snacks with it: layered salad with potatoes, eggs and mayonnaise, pancakes, draniki, crepes or flatbreads, stuffed eggs, tomatoes and baked eggplants. Caviar is often added to salads with other seafood, such as shrimp and crab. Pink salmon caviar adds tenderness to dishes, sockeye salmon caviar adds piquancy, and chum salmon caviar adds juiciness.
The Moscow-on-the-Wave fish market with an area of several thousand square meters opened in Kosino-Ukhtomsky in November 2023, and in Mitino in September 2024. Since their launch, two million people have visited them, and about 1.5 thousand tons of products have been sold. In addition to shopping arcades, there are storage areas with different temperature conditions, food courts, master class studios and laboratories for checking the quality of products.
The assortment includes more than 600 types of fish and seafood from the Astrakhan, Murmansk and Magadan regions, Kamchatka and Khabarovsk territories, Karelia, Crimea and Yakutia.
